pistachio tiramisu

Ingredients:


  • 1 container (8oz) mascarpone cheese, room temperature
  • 1 cup heavy cream
  • 2 1/2 cups strong black coffee, cooled
  • 5 tablespoons coffee liqueur (or to taste)
  • 1 teaspoon vanilla extract
  • 4 oz pistachio nuts, unsalted, shelled and chopped
  • 2/3 cup powdered sugar, sifted
  • unsweetened cocoa powder for sifting
  • 2 dozen lady finger cookies


Method:



Beat the cream, vanilla extract and powdered sugar until soft peaks form. Fold in the ROOM TEMPERATURE mascarpone cheese. Pour the coffee and the coffee liqueur into a shallow dish.


Quickly dip the cookies one at a time, into the coffee mixture and layer side by side in the bottom of a 9x9 dish. Or you could make individual desserts in small mason jars or glasses.


Spread half of the mascarpone mixture over the cookies. Dust with cocoa powder. Sprinkle a layer of nuts over the mixture. Repeat another layer.


Chill overnight or a minimum of 4 hours.
